Abstract

Introduction: The use of starfruit as an ingredient for processed candy with iron fortification can increase the economic value and utility of starfruit which has not been utilized optimally. Candy is one of the foods that is favored by children. Therefore, candy is considered suitable to be one of the fortified products because fortification of staple foods is difficult to control in terms of intake. The iron used for fortification is ferrous gluconate, because its absorption (bioavailability) is higher when compared to ferrous fumarate and ferrous sulfate.

Method: The microcapsules selected for use in making candy are 7.5% ferrous gluconate with an iron content of 6.6 mg/gram microcapsules. The iron fortification process in starfruit candy is to add iron concentrations of 5%, 10%, and 20% of the daily iron AKG for children (10 mg) for each piece of candy.

Result: The provision of fortified starfruit candy to children is candy with formula 3, namely 10 grams of starfruit dough with 2.25 grams of iron microcapsules and contains 15 grams of iron concentration. So that it can meet 15% based on the Nutritional Adequacy Rate (AKG) or equivalent to 1.5 mg.

Conclusion: The Nutritional Adequacy Rate for children is 10 mg/day. So starfruit candy can be given 1-2 times a day.
