Abstract

Introduction: Chronic Energy Deficiency (CED) is one of the most common nutritional problems experienced by pregnant women in Indonesia. This condition arises due to prolonged inadequate intake of essential nutrients, especially calories and protein. CED has adverse effects on both maternal and fetal health, including increased risks of pregnancy complications, low birth weight, and maternal mortality. Therefore, innovative strategies are needed to address this issue through the development of nutrient-dense and accessible functional foods. One promising alternative is the use of cricket-fortified coconut sugar.

Methods: This study employed an experimental approach to formulate Cricket-Fortified Coconut Sugar. Cricket flour was obtained by drying and grinding crickets, which was then incorporated into the coconut sugar production process. Nutritional analysis was conducted to determine the calorie, protein, carbohydrate, and fat content of the final product. The appropriate serving sizes were calculated based on the nutritional requirements of pregnant women in their first, second, and third trimesters.

Result: The Cricket-Fortified Coconut Sugar produced contains 336.84 calories, 54.2 grams of carbohydrates, 19.8 grams of protein, and 9.6 grams of fat per 100 grams. Based on calculations, the recommended serving size for pregnant women in the first trimester is 10 grams (1 tablespoon), and for the second and third trimesters is 15 grams (1.5 tablespoons). Consuming the fortified sugar in the recommended amounts can meet approximately 10–21% of the additional daily nutrient needs of pregnant women.

Conclusion: Cricket-Fortified Coconut Sugar is a promising local food innovation that can help address CED among pregnant women. This product not only enhances nutritional value but also optimally utilizes local resources, particularly crickets, which have been underutilized in the food sector.
